


This week we've been baking Blueberry Muffins, a favourite with everyone! This recipe is taken from the 'Your Recipes' section of Delia Online, posted by Krish. Very simple recipe and delicious muffins, enjoy!
Ingredients
For the muffin batter:
3 oz butter
6 tbsp whole milk
1 large egg
1 large egg yolk
¾ tsp vanilla extract
8 oz plain flour
6 oz sugar
1½ tsp baking powder
¾ tsp salt
14 oz blueberries
For the topping:
1½ oz butter cut into ½ inch cubes
2½ oz plain flour
3 ½ tbsp sugar
Method
1) Place the shelf in the top half of the oven and pre-heat to 190°C.
2) Melt the butter on a moderate-low heat, remove from heat and whisk in the egg, yolk, milk and vanilla until well combined.
3) Mix together the flour, baking powder, sugar and salt in a bowl.
4) Add the egg, milk and vanilla mixture and mix until combined.
5) Gently, but thoroughly, fold in the berries.
6) Divide the mixture into 6 greased muffin cases.
7) Rub together the topping ingredients and sprinkle over the batter.
8) Bake until golden and crisp (and until a wooden cocktail stick comes out clean) – approximately 18 to 20 minutes.
9) Cool for 15 minutes, scrape a knife around the cases and carefully remove the muffins.
