This week we've been treated to gorgeous homemade cookies made by the lovely Jenni Clarke. She's given us her recipe so you can have a go at making some yourself! They're really easy to make but so yummy - Happy baking! Ingredients 225g Self Raising Flour 100g Soft Brown Sugar 125g Caster Sugar 125g Soft Butter 1 Egg 1 Tsp Vanilla Essence 1 Tsp Salt Method 1. Firstly, pre-heat the oven to 180°C. 2. Secondly, cream the butter and both sugars together. 3. Add the egg and essence to the butter and sugar mixture and mix again. 4. Next, sieve the salt and flour into the mixture and work with your hands to create a dough. 5. Here's where you can get creative! If you like your cookies plain and simple then skip this step, but if you want to try some different flavours you can try adding chocolates, raisins, coco powder, whatever you like! 6. Then using a tray and some grease proof paper, pick up a ping pong ball sized piece of dough, flatten and shape onto the tray. If you're using a cookie cutter, make sure the dough is thick and easy to roll out with a rolling pin. If it's not then just thicken it up with a bit more flour. 7. Next, place in the oven for about 8-10 minutes. 8. Finally, once out of the oven, leave them for a minute to settle and then move each cookie onto a metal rack to cool.
